Cinnamon Rolls

Ingredients for the dough
2.5 teaspoons of dry yeast
½ cup of warm milk
2 tablespoons of granulated sugar
2 eggs
2 – 3 pinches of salt
100 gr. butter – cold, diced
3 cups flour
Ingredients for
40 – 50 gr. butter
½ cup granulated sugar
½ cup brown sugar
¼ cup cinnamon powder
Ingredients for the base
sea ​​salt
Ingredients for Frosting
1 heaped tablespoon labne – 50 gr.
2 tablespoons of butter – 50 g. – At room temperature
1 cup powdered sugar
Suyu juice of lemon
1 packet of vanilla

For dough;
Put butter and flour in a mixing bowl and rub it by hand until it becomes like sand.
Open the middle like a pool and add all the other ingredients for the dough to the middle of the pool and slowly pour the liquids into the flour mixture with a fork.
When the mixture has a slight consistency, put it on the counter and knead until it becomes smooth.
Sprinkle the dough into the bowl you kneaded with some flour and place your dough back into the bowl.
Cover the mouth of the container thoroughly with a stretch-free film.
Leave your dough to ferment for 1 – 1.5 hours at room temperature.

To combine;
When your dough is fermented, knead and remove the yeast.
Roll out your dough to be a long rectangle with the help of a roller. (30 × 45 cm)
Apply butter to the top layer at room temperature.
Mix granulated sugar and cinnamon in a mixing bowl.
Note: If your candies are very coarse, you can pull them lightly on the roll.
Then pour a lot of cinnamon sugar over the buttered layer.
Then fold it from its long layer and wrap it as a roll.
Cut your rolled dough into 12 pieces of buns.
Then put a piece of greaseproof paper on the bottom of your rectangular glass ovenware, sprinkle with sea salt and place the cut rolls in the bowl.
Make a tray yeast by sprinkling a cloth on it for 10 – 15 minutes.
Then bake in a preheated oven at 180 degrees for 20 – 25 minutes.

For Frosting;
Place the butter and labney in room temperature in a mixing bowl.
Beat well with a mixer.
Then add the powdered vanilla and powdered sugar.
Mix with a spatula.
Continue to mix by adding milk and lemon juice.
Your frosting is ready!
Note: If you get a very solid layer, you can open it with 1 tablespoon of milk.

To serve;
Put the cinnamon rolls you take out of the oven upside down on the plate you will serve.
Then peel off the greaseproof paper.
After it cools down slightly, serve the frosting you prepared by serving it.
